Apple Cider Donuts
Fall is here and so is apple cider! And that means…..it’s time to make the donuts!
I love the cooler temperatures, especially at night. I’ve always liked to sleep in a “cold” room and burrow under an assortment of blankets and comforters. When I was young, my mother sometimes had trouble telling whether or not I was actually under the mound of bedding when she came into the room in the morning.
Along with my fifteen gazillion covers, we now have our bed fluffed up with twenty gazillion pillows since Tim is still recovering from his recent ankle surgery. He needs to keep his leg propped up at night so the swelling doesn’t get out of control. This also means propping up his knee, his other leg, his back…..he is pretty much buried in a fortress of pillows. Between the blankets and the pillows, it’s surprising that there is room for us! Even the dog has given up and is sleeping on the floor.
Last night, I was sound asleep, all comfy and cozy under my blankets and comforter, when I was jolted out of sleep by my phone ringing. It was 4:00 am
Panic set in…OMG, who died? was my first thought (being Irish, it’s ALWAYS the first thought, and not just when it’s 4 am.
I popped up like a jack-in-the-box and grabbed my phone, only to have it stop ringing. As I fumbled around in the dark, trying to open it so that I could see who was dead (or who I needed to kill for waking me at this ungodly hour), I heard Tim very calmly say, “Oh, there you are.”
I turned on him faster than a shark on chum. “What do you mean, there you are?” I demanded, while my heart was cha-cha-ing like it was in the semi-finals of Dancing With The Stars.
“I didn’t know where you were, so I called your phone to find you.”
“It’s four o’clock in the bleeping morning!” I informed him. “Where the bleep did you think I’d be?”
“I didn’t know. I woke up and it didn’t look like you were in bed, so I thought I’d call you to see where you were.”
“So you thought giving me a heart attack was the best way to find me? You couldn’t just, oh, I don’t know, roll over and LOOK?!”
Needless to say, I’ll be taking his phone away from him until he is more responsible, or until my heart resumes a normal beat.
Ingredients:
- 1 cup whole wheat pastry flour (or regular pastry flour)
- 1/2 cup millet flour
- 1/4 teaspoon salt
- 2 heaping Tablespoons arrowroot
- 2 Tablespoons baking powder
- 2 teaspoons cinnamon (I use Penzy’s apple pie spice if I can get it)
- 1/2 cup unsweetened applesauce
- 1/2 cup apple cider
- 1/2 cup maple syrup
- 1/2 cup coconut oil(liquid oil)
- 1 teaspoon vanilla extract
- 1/2 teaspoon orange extract
- 1 Tablespoon apple cider vinegar
Directions:
- Preheat the oven according to the directions on your donut pan(s). Mine said 425
- In a large bowl, whisk together all the dry ingredients (flour through cinnamon)
- In a small bowl, whisk together the wet ingredients (applesauce through vinegar)
- Add the wet ingredients to the dry and stir to combine. Allow the batter to sit for 5 minutes or so to rise, then fill the donut pan and bake according to directions (I baked them for 9 minutes)
