Apple Fig Salsa
This super easy appetizer is perfect for fall.
I usually use whatever apples I have on hand, but I would recommend a tart apple like a granny smith to offset the sweetness of the figs. It will work equally well with sweet apples though like gala or honey crisp.
This is a very versatile dish as well. Simply leave out the onions and fennel and it makes a great topping for your morning yogurt or as a snack eaten all by itself!
Ingredients:
- 1 cup diced apple
- 2 Tablespoons minced red onion
- 4 figs, finely chopped
- 2-3 Tablespoons minced fennel
- 1 Tablespoon finely chopped mint
- juice of 1 small lemon (about 2-3 Tablespoons)
- pinch of salt
Directions:
- Combine all ingredients in a bowl, mix well, then refrigerate till ready to serve. Tastes best when allowed to sit in the fridge for a few hours.
- Serve on toast rounds or with crackers.
