Apple Pomegranate Spritzer
I love this drink for so many reasons.
It’s ridiculously easy to make, and you can make huge batches of the base, then mix the drinks as you need them. How sweet or tart the drink is depends on the ratio of the apple cider mixture to the pomegranate juice. Everyone can customize it to their specific taste. Plus it is a really pretty red color which makes it a festive drink right through the holidays!
Feel free to decorate it with orange or apple slices, but I don’t recommend pomegranate seeds as they sink to the bottom of the glass.
Ingredients:
- 2 cups apple cider
- 1/2 inch fresh ginger, sliced
- 2 sticks cinnamon
- rind from 1/2 orange
- 1/2 -1 cup pomegranate juice
- sparkling water
Directions:
- In a small pot, bring the cider, ginger, cinnamon and orange peel to a boil. Cover and lower to a simmer. Simmer 10 minutes, then turn off the heat and allow the mixture to cool. Strain into a jar, so that you are removing the cinnamon, ginger and orange rind.Refrigerate till ready to use.
- To make the drink, Put some ice into a glass (I like to use a tall glass) add 1/2 cup of the cider, 1/4 cup of the pomegranate juice and top with a splash of the sparkling water. (You can play with the proportions, but this is the formula that I like the best)
