Apple Waffles
A friend recently gave me a whole bunch of apples from her tree, so naturally, I went a bit crazy creating a whole new bunch of apple recipes! The only rule I set for myself was to keep them as easy as they’re delicious. Mission accomplished with this recipe if I do say so myself.
This is a one bowl recipe (plus a waffle iron) and comes together in mere minutes.
I use a box grater and grate the apples on the large hole side. I did peel the apples first, but only because the outside of these particular apples was not too appetizing, but this is optional. These apples were also fairly sweet and very juicy, so if you are using something more tart like a Granny Smith, I would recommend that you use the upper limit for the maple syrup. The best way to judge the amount of syrup you need is to add the syrup one Tablespoon at a time and judge the sweetness before automatically dumping in the whole three tablespoons. The beauty of not having raw eggs in a recipe is that you can taste it along the way without fear of getting sick.
I make my own oat flour by putting whole rolled oats in a blender and pulsing until I have a very fine flour, but you can find oat flour in most grocery stores these days. Bob’s Red Mill is a fairly prominent brand that you can even get on Amazon these days.
I topped my waffles with some pomegranates because I like the contrast of the tart seeds with the sweetness of the waffles, but any berry will work or just plain maple syrup all by itself.
Ingredients:
- 1 cup grated apple (about 2 good sized apples)
- 1-3 Tablespoons maple syrup
- 1/2 cup plus 2 Tablespoons of oat flour
- 1/8 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
Directions:
- Heat waffle iron according to directions.
- With a spoon, combine the ingredients in a bowl, then drop by spoonfuls onto the waffle iron and cook according to directions:
