Banana Pumpkin Smoothie/Pudding
Even in fall when the weather starts to get cooler, I do love a good smoothie.
Smoothies can be a lot of fruit though, so I try to add in yogurt or vegetable puree to offset the amount of fruit that I am drinking/eating. This recipe has a banana as it’s base (this recipe makes 2 smoothies) and apple cider which give it sweetness, but they are balanced by yogurt and pumpkin puree.
You can use the cream from a can of unsweetened coconut milk if you want to make this into a pudding that works great as a dessert, or just use milk of choice or even coconut water if you are drinking this as a smoothie. It’s very versatile depending on what your goals are with regard to nutrition.
For me, it’s the perfect fall drink because it’s just so easy to make with ingredients that I usually have on hand.
Ingredients:
- 1 banana
- 1/2 cup Greek Yogurt
- 1 cup pumpkin puree
- 3/4 cup apple cider (NOT apple cider vinegar)
- 2 Tablespoons pumpkin pie spice
- 1/2 cup cream separated from a can of coconut milk (to separate the cream from the water, refrigerate the can overnight or at least several hours ahead of time, open the can without shaking it and scoop out the cream)
Directions:
- Puree all ingredients in a blender, and drink immediately for a smoothie, or refrigerate for a few hours to firm up and eat as a pudding.
