Beets in Citrus “Butter” Sauce
There are some things that drive my husband crazy. One of them is being included on a group text.
Someone sends a picture to the nine of us and then the fun begins. In his own words:
Stop including me people!!! Picture is sent: Happy face. Clap, clap. Cute! Awwww. Wonderful! So cute! Thumbs up! Smiley face! Winking face! Adorable! So wonderful! Another smiley face! Smiley face with teeth!
Someone sends an article or note: Funny! Too funny! Thumbs up! Laughing face! Laughing with tears face! Laughing with tears turned on its side face! Someone liked a comment. Someone loved a comment. Someone thought a comment was funny! LOL! Hahahahahahahahaha! So funny!
I HATE GROUP TEXTS!!!!!!
Good thing he doesn’t feel strongly about things. He is such a go-with-the-flow kind of guy.
The other thing that drives him crazy is taking about bathroom issues.
“I do not need to know what anyone else is doing in the bathroom! I do not even want to know that there IS a bathroom. We should all pretend that we are on The Brady Bunch where they had one bathroom for nine people that only had a sink, hamper and tub…no toilet.”
Unfortunately for him, others in the family do not share his aversion to this discussion. Ahhh, the stories I could tell…and I will at some point, but for now, let’s just say, that, although I love beets, when I started eating larger quantities of them, I had a bit of a scare. Apparently, whatever it is in the beets that makes them red is not absorbed by your body. Enough said. Just don’t be scared if you haven’t eaten a lot of beets before.
And now that I have totally whetted your appetite and made you want to sit down to a huge meal of yummy beets…Smile! Clap, clap! Laughing! Heart!
Ingredients:
- 4 medium beets, washed and peeled, cut in half, then sliced into thick slices, you can use red or yellow or any combination of the two.
- 2 TBS melted vegan butter
- 2 teaspoons lime or orange zest
- squeeze of lime or orange juice
- salt and pepper to taste
Directions:
- Preheat oven to 400.
- Mix beets with butter and zest. Put on lined baking sheet and roast for 30-40 minutes till tender, stirring half-way through.
- When tender, toss with juice, add salt and pepper to taste. Serve immediately.
