Blackberry Peach Crumble
When I was a kid, we used to go to a nearby lake every day in the summer to swim. On the far side of the lake, there were blackberry bushes where, when we were old enough, we were allowed to go pick and eat blackberries till we couldn’t eat any more.
One day, my younger sister decided to take a shortcut to the blackberries by walking directly across the lake.
Apparently, she thought she was aquaman or a mermaid so she walked into the lake…and just kept walking, sort of like a scene from Gilligan’s Island. Within seconds, all that was visible of her was her hat, floating on the surface (which did resemble Gilligan’s, now that I think of it.)
Things that float: wood, inflatable rafts, boats and hats.
Things that don’t float: rocks…and my sister.
My mother hauled her out of the lake, and it was decided then and there that she probably didn’t have a career as a swimmer, but she would make one heck of an anchor.
And the best part was, the blackberries were all mine and not Gilligan’s!
Ingredients:
- 1 container of blackberries
- 3 peaches
- 1 teaspoon vanilla extract
- 1/2 teaspoon finely chopped mint leaves
Topping ingredients:
- 1/2 cup Bob’s Red Mill Paleo flour or the same amount of oat flour
- 2 Tablespoons monkfruit
- 2 Tablespoons vegan butter, softened
Directions:
- Preheat the oven to 400.
- Peel and slice the peaches, then cut each slice into 2 or 3 pieces. Depending on the size of the blackberries, cut each of them half or thirds. * Make sure the fruit is ripe. If not, you might need to add some monk fruit to the fruit mixture, and it won’t cook down as well either.
- In a bowl, combine the blackberries, peaches, vanilla extract and mint.
- In a separate bowl, combine all ingredients for the topping and mix until it resembles bread crumbs.
- Pour the fruit mixture into ramekins and spread the topping evenly over (Note: If you like a lot of topping, simply double the amount you make. I got 4 shallow, oval ramekins with this amount of filling and topping. Each one was an individual serving)
- Put into oven and bake 20-25 minutes till golden and bubbly.
