Blueberry Mango Protein Smoothie
My pretty much every day breakfast is overnight oats, but occasionally I stray into smoothies, especially when I forget to make the oats the night before.
The best thing about smoothies is that I can use fresh or frozen fruit or a combination of the two, so I always have something on hand. This week it was fresh blueberries which are in season right now so they are very sweet and juicy, and some frozen mango I had from a few weeks ago when I bought too many to use before they went bad.
I often throw in a handful of spinach or nut butter, but this time I kept it simple with just four ingredients. Not adding a leafy green kept the color a bright purplish blue, instead of a purplish gray, so visually, it was really pretty and very seasonal.
If you don’t have vanilla protein powder, you can add whatever you have. If you don’t use protein powder very often, you can always buy a single packet (Garden of Eden sells them as does Vega, and I am sure there are others as well), which you can definitely use to make two or three smoothies depending on how much you choose to put in. I went with half of the scoop, which is about 3 Tablespoons, but you can easily adjust it to your taste.
Ingredients:
- 1 cup blueberries
- 1/2 heaping cup mango
- 3 Tablespoons protein powder
- 1 container Greek yogurt (5.3 oz.)
Directions:
Put all ingredients in a blender and blend until smooth.
