Blueberry Scones
There are approved puppy foods, and unapproved puppy foods. Approved puppy foods are the ones I give Chloe, unapproved puppy foods are the ones Tim gives to Chloe. Needless to say, she prefers the unapproved ones.
Blueberries are one she is allowed to have. Unfortunately, she hates blueberries. They somehow offend her.
She loves pizza, Italian subs, grilled cheese sandwiches, basically any kind of carb with cheese is that girl’s friend.
She also has begun to think that anytime we eat, she should eat. Thank you Covid. That’s a lot of training down the drain.
The other day, we were trying to eat our stir fry in relative peace (this is after she wolfed down her own dinner) and were getting the sad puppy, “I hope you feel guilty for being giant pigs in front of poor, starving little me” looks. As a reward for not leaping up and snatching the food out of my mouth (the bar is set pretty low around here), I got a box of her treats, took out the bag and gave her one when I was finished.
I honestly, can’t remember whether the phone rang or I just got up to take the dishes to the kitchen, but I had a brain hiccup and left the open bag sitting on the couch.
A few minutes later, I heard Tim asking Chloe, “Are you supposed to help yourself to those?”
I walked back into the room, and there she was, head coming out of the bag with a treat firmly clenched between her teeth.
“Who gave you that treat?” I demanded in mock indignation.
Without hesitation, she swallowed the treat whole and looked at Tim.
“Did daddy give that to you?” I asked.
She looked at me, then the box, then Tim and back again at me and then repeated the sequence to make sure I understood that Tim was the real culprit, and she was totally blamelesss.
If only I could get her to do that with blueberries and her medications. Sigh.
Ingredients:
- 1 1/2 cups oat flour
- 1/2 cup monkfruit
- 2 teaspoons baking powder
- 3 Tablespoons butter, melted
- 1/4 cup unsweetened applesauce
- 1 teaspoon lemon zest
- 2 Tablespoons lemon juice
- 1/2 cup frozen or freeze-dried blueberries (I recommend the mini ones –Maine blueberries)
Directions:
- Preheat the oven to 400
- Whisk the monk fruit, flour and baking powder together in a medium bowl. Add the butter and combine until the mixture resembles wet sand.
- Add the applesauce, zest, lemon juice (if using) and mix until a thick batter forms.
- Fold in the blueberries, being careful not to defrost them first or be too aggressive with the folding or else they will (bleed) into the batter and turn everything a bluish color.
- Using an ice cream scoop, form 6 tightly packed balls and place on a baking sheet. Bake for 12 minutes.
- When you remove from the oven, gently press down on them with the back of a spatula to slightly flatten into a scone shape while they are still warm.
- Cool a bit before transferring to a baking rack to continue to cool.
