Buttery Cauliflower Rice
Sometimes, you have a rough start to the day. The other day was such a day for me.
First, I overslept. Then, I had counted having an hour to run around and get some things done after working out, and well, that didn’t work out.
Somewhere in this mix, I called my parents like I do every day. And found out that I am old.
Parents: So what are you doing today?
Me: Going to a class that a friend of mine is leading.
Parents: She is always doing something.
Me: Yes, she has lots of energy.
Parents: That’s because she is so much younger than you.
Me: She is Mike’s (my brother) age. (meaning I don’t think of her as being that much younger.
Parents: Right. That’s ten years. (Pause) A whole generation younger.
Me: ??? Seriously???
With a beginning like that, I needed something easy to make for dinner. Cause I’m old. And have no energy apparently.
This cauliflower rice was just the thing along with some steamed green beans and baked tofu.
Ingredients:
- 1/4 cup diced red onion
- 1/3 cup thinly sliced green onions
- 1 Tablespoons butter (I use Earth Balance vegan butter)
- 1 cup riced cauliflower
- salt to taste
- squeeze of lemon
Directions:
- Melt butter in a pan over medium heat. If you use actual butter, you need to be careful it doesn’t burn, so you might want to start with some olive oil, then add the butter after the onions are cooked.
- Add onions (both kinds) and saute about 5 minutes or till onions are a bit tender.
- Add cauliflower and saute a few minutes till al dente.
- Add salt and a good squeeze of lemon and stir.
- Serve Immediately.
