Cabbage Steaks with Apple and Leek Puree
The other day I was visiting my parents to check on my mom who had a bad fall and needed several staples in her leg. Even though they have had both of their vaccine shots, we still wear masks and stay socially distant which makes it difficult sometimes to have a conversation. Plus the fact that I swear everyone has some hearing difficulties in general. Okay, a lot of hearing difficulties.
I commented on how her bandage was now blue where earlier it had been red.
Me: I like the blue bandage
Mom: What?
Dad: Your bandage. It’s blue.
Mom: I wanted white.
Dad: They didn’t have white. They had red, yellow, green, blue, pink…
Mom: My bandage is blue.
Dad: I know. That’s because they didn’t have white.
Mom: I wanted white, but they had blue.
Dad: They didn’t have white. They had red, yellow, green, blue, pink…
Me: (Sorry that I had even noticed the bandage). Maybe next time they will have white. Anyway…..so what’s on the menu for dinner tonight?
Mom: Yes, white. I wanted white. They told me they didn’t have white.
Dad: They didn’t have white. They had red, yellow, green, blue, pink….
Me: (aaaaaargh!)
Ingredients:
- 1 head of cabbage, cut into 1″ steaks
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon dried mustard
- 3 Tablespoons melted butter or oil
- 3 cups sliced leeks, white and light green parts only
- 4 cups apple sliced (peeled and cored)
- salt
- 1/4-1/2 cup water
- paprika (optional)
Directions:
- Preheat oven to 400. Line a sheet pan with aluminum and brush lightly with oil.
- Combine salt, pepper, garlic powder, mustard and 3 Tablespoons of oil. Brush both sides of the steaks and roast for 45 minutes, flipping over halfway through.
- Meanwhile, in a pan, combine the apples, leeks and water. Sprinkle with a little salt and saute, covered, till tender, stirring frequently and adding more water a little at at time if necessary to prevent sticking and burning.
- Puree apple/leek mixture, adjusting salt if necessary. Spoon some onto plate and top with a roasted steak. Sprinkle with paprika if desired.
