Cannellini Bean and Avocado Veggie Wrap
I love this recipe because it can be used in so many ways.
At the base is a spread/dip/dressing. I start by mashing beans and avocado together with a bit of citrus, but here’s where the fun begins. By itself, this would be tasty, but a bit bland. So…add some fresh herbs like mint or basil. Spice it up with crushed red peppers or a dash of hot sauce. Keep it basic with just salt and pepper. Toss in some dried herbs or spices like onion powder or Italian seasonings. Mash in a clove of roasted garlic. The sky’s the limit!
As a spread, I put it on my favorite bread or one a romaine lettuce leaf with it, then add whatever veggies I have roping around the fridge to top it off. For a dip, I cut u a bunch of fresh veggies and dip away or stuff it into a mini-pepper for a self-contained, no waste snack or lunch. Want to use it as a dressing? Pop it into a jar with a tight lid, add a splash of water, shake well and pour over your salad for a flavorful, healthy dressing.
There is nothing this recipe can’t do!
Ingredients:
- 3/4 cup cannellini beans
- 1 /2- 1 avocado
- juice from 1/2 lemon
- wrap of choice
- veggies of choice:radishes, tomatoes, peppers, etc.
Directions:
- In a small bowl, mash the beans and avocado with the lemon juice till smooth. Add a pinch of salt and pepper to taste.
- Spread on the wrap then top ith veggies.
