Chilled Corn and Coconut Cream Soup
Whenever I make something with coconut milk, I rarely use the whole can, so the question is: what do you do with leftover coconut milk? Answer: make corn and coconut cream soup! I just love it when things are easy and all work out.
That has not been the case with everything in my life recently.
As if 2020 was not going badly enough, we found out we had to tent the house for termites. Oh goody. So if COVID doesn’t get me, the poison gas will?
They assure you that the gas is not harmful to people or pets once they air the house out, but they also tell you not to leave any opened containers of food or food in boxes as opposed to cans and bottles. And remove all medicine. But it’s totally fine to eat off the dishes when you get back in. Yeah. No. Call me crazy, but poison gas sprayed inside the house does not scream “safe” to me.
It is a long process of preparing the house (sort of like moving, but not nearly as much fun), but the actual tenting and gassing are the quick part. As long as they don’t mess it up. And they messed it up.
I got a call on the day the tenting was supposed to be done that they would have to come back the next week because the crane they brought wasn’t big enough.
So let me get this straight: You’ve been at the house several times, measuring, but the crane isn’t tall enough?
Did the house have a growth spurt? Were you looking at the tape measure upside down or backwards? How do you not bring a big enough crane? They have it figured out pretty well at Disney. You have to be this tall to go on this ride. Maybe the cranes should be labeled with pictures of Goofy and Pluto. If your house is 2 stories, you need the Goofy crane, 3 stories need Pluto. A ranch is Mickey Mouse.
Sigh. I definitely need more easy in my life.
Ingredients:
- 3 cups cooked corn (any kind will do: frozen, canned or fresh—great use for leftover corn on the cob)
- 2 cups coconut milk (canned, not boxed)
- 4 teaspoons lime juice
- 1/4 teaspoon vanilla extract
- pinch of salt
Directions:
- Place all ingredients in blender or processor and pulse till it reaches desired consistency.
- Best when eaten slightly chilled or at room temperature. Since the coconut cream will really thicken when it is put in the fridge, you might want to allow it to sit out a room temp for 20 minutes or so before serving if you don’t like the super thick consistency.
