Chocolate and Peanut Butter French Toast
It’s official. We have run out of things to talk about in our family.
Nobody is going anywhere or doing anything except the grocery store or working from home, which does not make for fascinating conversation.
The other day, I literally retold the same story about some guy I saw at the grocery store eating a cookie to at least ten people. Eating. A. Cookie. Not breaking the world record for most cookies in a minute. Not Brad Pitt at the local store eating a cookie. Not a Bigfoot sighting where he was rampaging through the cookie aisle leaving chips ahoy carnage everywhere. Just some random guy eating a cookie. And yet I kept telling the story. I kept waiting for someone to say, “who cares?” But they were all like “tell me more about this cookie-eating man”. It was a new low. Until yesterday.
Yesterday, my father spent twenty minutes explaining to me that the gate into their garage was broken. TWENTY MINUTES! I know less about current events than I do about the saga of the gate. I think I lost consciousness somewhere around minute 9 and we were only up to the part where he had to get the first new key card. I’m still not sure whether it is currently broken, and I’m afraid to ask.
I routinely talk to family members who live less than a few miles away, and we compare notes on the weather….”it’s starting to snow here. Are you getting snow there?” “ It’s only flurrying here; I’ll take a picture and send it to you” “ What’s the temperature there?” OMG! They live a five minute drive away; what are the options?! If it’s freezing where I live, it’s a pretty safe bet that they are not out in their yard sipping a pina colada and getting a tan! And yet, that is the daily conversation.
I find I routinely begin any conversation where I have a juicy piece of gossip like who we saw walking their dog at 10 am instead of the usual 9am with the disclaimer: stop me if I’ve told you this already. Sadly, no one ever stops me.
So if anyone has any new topics to suggest, I’m open to possibilities…as long as it’s not the weather, broken gate or men eating cookies.
Ingredients:
Chocolate:
- 1/4 cup silken tofu
- 1/4 cup date syrup
- 2 Tablespoons cacao powder
- 1/4 cup coconut milk (from a can–mix before measuring)
- approximately 12 slices of stale baguette
Peanut Butter:
- 1/4 cup almond milk
- 1/4 cup silken tofu
- 1/4 cup plus 2 Tablespoons peanut butter
- Approximately 12 slices of stale baguette
Directions: **These are two separate batters
- Put all ingredients (except bread) for the flavor of choice in a high speed blender and puree till smooth and creamy. Pour out into a shallow dish.
- Heat a pan over medium heat, add some butter if necessary (I used a non-stick pan and I did not need to add butter).
- Place each slice of bread into the batter, turn over to coat the other side, then shake off any excess batter. Cook 1-2 minutes till golden, then flip and cook on other side.
