Chocolate Buckwheat Waffles
When I first went plantbased, I did what everyone does…I googled vegan recipes. And there were a LOT of them!
I gotta be honest here, it was kinda hard to find really good ones that could compete with my four main food groups: sugar, butter, eggs, and milk chocolate. I tried, oh how I tried. I made all kinds of bars, and puddings, and stuffed this, and roasted that. I went out and bought really weird ingredients like arrowroot and xanthan gum. Some were hits, most were misses.
And while I gamely slugged through recipe after recipe, my family did not quite have the same dedication I did. You want to see people back away like they’ve just come face to face with Mike Myers holding Cujo back with a wet noodle? Try giving them a gray mushy lump wrapped in a soggy brown piece of unidentifiable plant, sitting atop a plate of hospital green goop. Yeah. Basically why I started to come up with my own recipes. Now, they just back away from tofu. Progress!
I think some were just a little too hardcore for us. The switch from white flour to something like buckwheat is like asking a coffee drinker to switch to celery juice. You are going to get blamed for poisoning them. Some people’s systems just can’t take a punch. Wimps.
So clearly, buckwheat is a challenge And what do we do when confronted with a challenge? We turn to chocolate!
These waffles definitely have a different taste and texture than my chocolate brownie waffles, but they have fewer ingredients, and I tried to keep it (mostly) hardcore. It is a chocolate waffle after all
Ingredients:
- 1 cup almond or macadamia milk
- 1 Tablespoon apple cider vinegar
- 1/4 cup plus 2 Tablespoons pure maple syrup
- 1 cup buckwheat flour
- 1/2 cup raw cacao powder
- 1/3 cup unsweetened applesauce
- 1 teaspoon baking soda
Directions:
- Starting with the wet ingredients, place all ingredients in a high speed blender and process till smooth and creamy.
- Follow the manufacturers instructions for your waffle iron to cook the waffles.
Enjoy!
Top with fruit, nut butter, ice cream, whipped topping, vegan chips, or whatever your heart desires.
