Chocolate Mousse
My brother flat out refuses to eat anything classified as vegan. It is his strict policy to avoid it like the plague.
Challenge accepted.
I make this mousse every holiday, and have to be careful not to eat it in front of him since he hoovers it into himself like there is no tomorrow. As soon as he sees me eating something, it is the kiss of death. His lips slam shut faster than the wizard slammed the door in Dorothy’s face. No entry for anything vegan. Ever.
I count this as one of my most successful recipes, since it fools even him, but then again, it might just be that I am a (tiny) bit older and much wiser and have lots of experience messing with his head. 😉
ingredients:
- 1 cup raw cashews, soaked for 2 hours
- 1/2 of an avocado
- 1. 1/2 cups almond milk
- 1 cup cacao powder
- 1/2 cup maple syrup
- 2 teaspoons chocolate extract
- 2 pinches of sea salt
Directions;
Place all ingredients in a high speed blender, like a Vitamix, and process till smooth and creamy. Pour into serving cups, cover with plastic wrap, and refrigerate before serving. Can be made a day in advance.
