Coconut Turmeric Sauce/ Pudding
Awhile back, I made mini-meatballs for a family gathering. Everyone in the family LOVES meatballs, and everyone has their own special recipe for them. Naturally, mine are the best. Vegan or not.
I toyed with the idea of making all of the meatballs vegan, then dividing them into two different bowls and just telling everyone that one of the bowls was vegan. If they assumed the other was not, well…..hehehe.
I tossed out the idea to someone in the family who, after a fairly long pause, said, ” How do they taste?”
“Really good,” I replied.
“No. That’s not what I mean,” she clarified. “I’m sure they taste good to you because you are vegan, but would they taste good to everyone. Are they actually good?”
Ummmm. Not sure how insulted I should be here. On a scale of 1 to 10, can I go with a 15?
“What I mean, is, not everyone is vegan, and they expect things to be a certain way.”
Are these the same people that, when we were kids, brought sandwiches made with things like mayo and tuna to school where they sat on an unrefrigerated shelf in a paper bag for HOURS before we ate them for lunch? Cause that’s a really low bar to beat taste wise.
And if you don’t think they will like the meatballs, wait till I tell you about my stuffing…hehehehe.
Ingredients:
- 1 cup raw cashews
- 1 cup coconut milk
- 1 teaspoon turmeric
** To make this into a dessert, simply add 2 Tablespoons of monk fruit to the recipe.
Directions:
- Soak the cashews in water for at least 2 hours. Drain.
- Pour the can of coconut milk into a bowl and whisk to combine the cream and whisk to combine the cream and water. Measure out 1 cup of the milk, keeping the remaining amount for another use.
- Put the milk, cashews and turmeric in a high speed blender and process till smooth.
** If you are making this as a dessert, I recommend spooning it into individual dishes and putting it into the refrigerator to chill and firm up into a pudding. Top it with fruit (papaya and mango go great with it), drizzle some chocolate on top (what doesn’t chocolate go with?) or maybe add some nuts (pistachios are great here).
