Cucumber Avocado Cream
This is probably the easiest recipe in the world. It is barely worth even writing about, so I will only say that it goes really well with my Greek chickpea patties or my papaya and black bean salad just to name a few.
And cue the big sigh of relief that you won’t be subjected to another story from my childhood.
Ingredients:
- 1 cup peeled, sliced and seeded cucumber (about 3/4 of a large cucumber )
- 1/2 of an avocado
- 1/8 teaspoon salt
- 1 heaping teaspoon diced onion
- juice of 1/2 of a lime
- optional: add fresh herbs such as mint, basil, cilantro or parsley or even spice it up with a pinch of cayenne, chilies, ginger or garlic. Start small with the spices (maybe 1/8 of a teaspoon at most and add gradually, tasting after each addition). You can go a bit bolder with the herbs and start with a full teaspoon or even tablespoon to taste.
Directions:
- Place all ingredients in a high speed blender and mix till completely smooth and creamy.
