Cucumber Salad Asian Style
Like many people, we are trying to get take-out and support our favorite restaurants during this time. Sadly, it is sometimes harder than it should be.
Recently, we ordered from a place that does not have any delivery options, so we had to go pick up. No problem, right? Wrong.
We drive all the way there, which is about a 20 minute drive, and as I am about to get out of the car, I realize I have my phone, but in the wrong, non-wallet, walking the dog case, and I’m pretty sure they don’t take Apple Pay. So I ask Tim for his card. Turns out, he doesn’t have his wallet either. Dumb and dumber.
He thinks he may have paid when he ordered it, so I should go in anyway before we spend 40 minutes driving home and back again. Not. In. My. Happy. Place.
I go in and ask the guy behind the counter about the order.
“Yes,” he says. “Waffle fries and cheese steak.”
“No. No waffle fries and DEFINITELY no cheese steak. Are you sure that order is for Tim?”
“Yes,” he insists. “Waffle Fries and cheese steak.”
“Maybe it’s under our last name?”
“No. Order for Tim: waffle fries and cheese steak.”
Okay. Stop saying waffle fries and cheese steak. I’m not taking waffle fries and cheese steak.
So back out to the car I trudge.
“Okay, so payment wasn’t an issue because they totally screwed up the order and I wouldn’t take it.” I explained to Tim. “They had waffle fries and cheese steak along with other stuff that sounded like our order, but clearly they got us mixed up with someone else.”
“Yeah, that’s our order,” Tim responded.
“Waffle fries and CHEESE STEAK???”
“Waffle fries and cheese (Daiya vegan cheese) STICKS,” he clarified.
“When did you order fries and cheese sticks?” I demanded.
“I added them to the order at the last minute.”
Turns out payment wasn’t the issue I should have been worried about. Communicating through masks at a social distance and a husband who has a weakness for waffle fries and cheese sticks was the larger problem.
Ingredients:
- 4 cups sliced cucumber (about 2 large cucumbers)
- 1/2 cup sliced green onions
- 2/3 cup diced red bell pepper
- 1/2 cup grated carrot (use the large hole side of a box grater)
- 2 Tablespoons toasted sesame seeds
- 2 Tablespoons sesame oil
- 2 Tablespoons fresh lime juice
- 2 teaspoons grated fresh ginger (use the large hole side of a box grater)
- 1 teaspoon honey (optional)
- pinch of salt
Directions:
- Prepare the cucumber by peeling it, cutting it in half horizontally, then scraping out the seeds (I use a grapefruit spoon) before slicing it into 1/4 inch slices. Put it in a large bowl, then add the onions, pepper, carrot and sesame seeds.
- In a jar with a tight lid or a small bowl (use a whisk) combine the sesame oil, lime juice, ginger, honey (if using) and salt. Shake or whisk well to combine, then pour over the cucumber mixture.
