Garlic and Chive Sweet Potato Donuts
I talk to my parents every day (they are in their late 80’s, so this is very much a gift to be able to do this).
Sometimes, however, it’s the gift that keeps on giving even when you don’t want it to.
The other day, I called to check in and my father told me that he had the stomach flu…and then proceeded to tell me all abut it in vivid, technicolor detail. Timing, rate, frequency and volume, and once he started there was literally no stopping him. Trying to stop him from disclosing all the gory details would be like trying to make the water flow back into the firehose. He launched into a full on report like he was being debriefed after a covert spy mission and the fate of the world hung on each and every detail. I will be having nightmares about this for years to come. It’s good to know that your parents have the ability to scar you for life no matter what age you are.
It’s not that he was delirious from dehydration, or lonely for someone to talk to, it’s just that he was being…himself. My father is the only one who could retell Tolstoy’s War and Peace and actually make it longer! He is the person who telemarketers hang up on because they are never gonna recoup in money what they have wasted in time. He could make an auditor from the IRS give him money back just to escape. The man loves a good detail.
I called later in the day to make sure he was still doing well and had seen the nurse (he did) and he tried to walk me through the whole experience all over again, starting with lunch the previous day and the sandwich he will never be ordering again since it did not taste nearly as good the second time. Like I said, scarred for life.
Ingredients:
- 1 cup whole wheat pastry flour
- 1/2 cup mashed sweet potato
- 1/4 teaspoon salt
- 1 Tablespoon baking powder
- 2 Tablespoons chopped chives
- 1/2-3/4 teaspoon ground garlic
- 1/4 cup Greek yogurt
- 1/4 cup almond milk plus 2 Tablespoons
Directions:
- Preheat oven to 425
- In a medium bowl, combine all dry ingredients. In a small bowl, combine all wet ingredients. Pour the wet ingredients into the dry and stir gently to combine.
- Spoon the batter into a lightly greased donut pan. Bake 7-9 minutes.
