Graham Cracker Granola
I posted this recipe on Instagram a while back, but I wanted to add it to my blog since I have been using it in a variety of recipes.
It is easy to make, so don’t be scared by the amount of time it takes. 99% of the time, it is unattended. Seriously. Walk away. Don’t touch it, look at it, think about it, worry about it. It will cook itself with no help from you. You can take the dog for a walk, make and serve dinner, watch an episode of NCIS, SVU, OC, RHOA, CRAP, or whatever else tickles your fancy. Wash your hair, get a mani, run to the store for more ice cream…this does not need your help to bake.
It cooks low and slow, so if you set the oven to the correct temp, everything will be fine. You can even make a double batch and store it in an airtight container till you need it again. You can eat it as granola, or grind it up to use as a replacement in recipes calling for crushed graham crackers.
Don’t be tempted to crank up the heat to make it cook faster. You will burn it. I swear to you. It cannot be done. I tried. I even tried by accident. No one likes burnt granola. No one likes the smell of burnt granola. You will hate yourself in the morning when your kitchen still smells like burnt granola.

Ingredients:
- 2 cups rolled oats (NOT quick cooking, NOT steel cut, just regular rolled oats)
- 1 Tablespoon ground cinnamon
- 1/4 teaspoon salt
- 3 Tablespoons coconut oil (the liquid kind, not solid)
- 1/2 Tablespoon molasses
- 3 Tablespoons (vegan) honey
- 1 Tablespoon maple syrup
Directions:
- Preheat the oven to 250.
- In a medium bowl, whisk together the oats, salt and cinnamon.
- In a small bowl, whisk together the oil, molasses, honey and syrup. Hint: measure the oil first. It keeps the molasses and honey from sticking to the measure.
- Pour the wet ingredients into the dry and stir well to combine using a spoon, not the whisk. Spread out on a baking sheet and put in the oven for 1 hour. Remove when done and allow to cool before using.
