Green Gazpacho
Hello Spring/early summer!!!!
At some point when I was waaaay younger, someone told me to keep a journal whenever I traveled. So I did, and I found them recently when we were cleaning out a storage closet.
I used to go with my mom almost every summer on a tour of (insert country here). There was a local group of anywhere from 5-10 of my moms friends and me who would join a larger tour group for an on the bus, off the bus, ready at 6:00am bus tour every day for ten days. It was a marathon, but we laughed and always had a good time. Which you think I would have written about in the journals. But no.
Did I write about the time someone kidnapped the bus driver’s leprechaun mascot (doll) and we made fake milk carton ads (you had to be around int he 80’s to get this one), wrote ransom letters and threatened to mail bits of stuffing, and generally just ran with it as long as we could? No. I did not. Did I write about the time one of us tried to adjust a luggage bungee cord strap and accidentally whacked the poor man standing in line behind us at customs in a very painful area? No. I did not. But these things have become the stuff of legends in our family, so who could forget them?
What did I write about? Weirdly…the food. I was preoccupied by what our food vouchers could buy in Paris, what was offered on the buffet in Italy, How they prepared meals in Greece and a very detailed entry about the meal we had in Morocco one afternoon. Lots and lots of menus. And almost none of them are good. From what I can tell I drank way too much Diet Coke, ate my body weight in bread and various pastries, consumed so much pasta that I’m surprised I left any for the Italians, and ate way too few veggies!
So, to make up for all that lost time, I am now eating as many fruits and veggies as I can, like in this twist on gazpacho.
Ingredients:
- 1 English cucumber
- 1/2 small onion
- 1/2 -1 teaspoon minced garlic (1 clove)
- 1/2 small green pepper
- 1/2 cup basil leaves
- 1/4 teaspoon salt
- 1 dozen green seedless grapes
- lime juice
Directions:
- Combine all ingredients in a blender and pulse till it reaches desired consistency.
