Mango Pineapple Marinade/Dressing
The problem with salad dressings and marinades is that they are often loaded with sugar, salt and oil, so maybe not the healthiest thing to add to your healthy salad.
But salad dressings are really meant to enhance your salad, and help pull the flavors together, so what to do?

Salad dressings can be made out of so many things: fruits, veggies, even beans. Have a favorite hummus you like? Just add some water or veggie broth and shake it up in a jar. Instant salad dressing. It doesn’t get much easier than that. Fruits and veggies are all over the farmers market right now. How about some fresh, juicy tomatoes (there’s your acid) combined with a bit of roasted garlic and veggie broth or water? Maybe add a splash of oil (just a splash for flavor, not a glug) and a pinch of salt or even dried peppers for spiciness. Perfect summer salad dressing.
The recipe here is more fruit forward. Mango, pineapple, roasted garlic, cilantro and lime or lemon juice make a creamy, dreamy summer salad dressing that can double as a marinade for your main protein like tofu. It is sweet and tangy and creamy all in one without using any oil, no refined sugar and just a pinch of salt. Feel free to substitute basil for the cilantro and even add some water to it to thin out the dressing so it is the consistency you like.

Ingredients:
- 1/3 cup mango
- 1/3 cup pineapple
- 2 Tablespoons packed cilantro
- 3 cloves roasted garlic
- juice of 1 lime
- 1/8 teaspoon salt
Directions:
- Blend all ingredients till smooth and creamy
