Onion Garlic Marinade
Warning: If you are a member of the royal family or a vampire, do not read any further since you will never be able to try this recipe. If, however, you are allowed to eat garlic, this is perfect for you! In fact, since I’ve come up with this recipe, I’ve poured it over pretty much everything I’ve made for the past week or so, and haven’t found anything yet that it doesn’t taste great with.
I may have gotten a bit too excited about it though, and made pretty much everyone and anyone who has come into the house try it. By itself. Raw. Straight back, no chaser. Oh sure, they loved it in my Eggplant and Squash Tian, and my Tomato and Eggplant Rounds, but that was cooked. Not raw. My bad.
Here, try this, I said to my neighbor, offering her a spoonful. Take a taste of this, I encouraged my friend. Somehow, I thought the looks on their faces was pure, unadulterated bliss. In retrospect, it was more likely a look of desperation as they tried to bolt out the door in search of something a bit milder, like, oh, say, a jalapeño pepper. Pretty sure the first thing they did when they hit the sidewalk was to text everyone I know and warn them that this was not a good week to visit. Blueberry pancake week? Line around the corner waiting to try them. Chocolate Mousse week? People asking for doggie bags. Raw onion and garlic week? It was like they were on the Titanic and the last lifeboat was being lowered into the water.
It wasn’t until I made Tim try it that I realized how strong it actually was in its raw form (apparently my tolerance for really strong flavors is way higher than most people’s). I got the spoon all the way up to his lips and somehow managed to slip a few drops into his mouth before the smell alerted him to the danger.
What? I demanded as he tried to remove his tongue from his mouth since chugging water evidently didn’t erase the taste.
That’s pure onion and garlic! He managed to choke out.
Well, duh. Yeah. With some vinegar and olive oil. What? Too strong? Okay, I’m going to take that face as a yes.
I promise you, though, that as long as you don’t chug it, and use it properly, it is quite delicious and adds a wonderful flavor to just about anything you put it on. Unless you really, really like raw onions and garlic. Then you can drink it like a milkshake.
Ingredients:
- 1/2 large onion, roughly chopped
- 3 cloves garlic
- 1/4 cup olive oil
- 1 Tablespoon white balsamic vinegar
- 1 Tablespoon fresh oregano leaves (optional)
Directions:
Puree everything in a high speed blender till completely liquefied. Use as a marinade or sauce.
