Orange Scented Barbecue Cauliflower Wings
The other morning, I was talking to my SIL who was on her way into work.
It just so happened that I was getting the dog her breakfast at the time, and was getting a bit of grief and guilt from the dog because I was not moving fast enough (so what else is new?–she is a benevolent dictator, but a dictator nonetheless).
I made some comment about having to think about what I was doing, to which my SIL responded, “You’re not paid to think!”
Unfortunately for her, she just happened to be crossing paths with someone from work at that exact moment, who apparently thought she was directing the comment to him.
“I didn’t mean you,” she spluttered. “I’m on the phone with someone. Really. You are totally paid to think; you think all the time.”
As I convulsed in laughter, I waited for her to offer to put me on the phone to prove it, but they must have believed her and moved on.
“I hate you,” she muttered at me.
“You know I was totally thinking of putting myself on mute if you put me on speaker, right?” I asked, trying not to laugh too hard.
“I’m not talking to you anymore on the way into work. You always get me into trouble.”
Hehehehehehehehe. And my job here is done.
ingredients:
- 12-14 large cauliflower florets
- 1 teaspoon garlic powder
- 3/4 teaspoon orange zest
- 1/2 teaspoon salt
- 1/4 cup tapioca flour
- 1/4 cup whole wheat flour (or spelt, or white)
- 1/4 cup barbecue sauce
- 2 Tablespoons butter (melted)
- 1/2 cup almond milk
Directions:
- Preheat the oven to 425
- In a medium bowl, combine the garlic, salt, zest, tapioca and whole wheat flours. Whisk, then add the almond milk and whisk until smooth.
- Add the florets and toss them until they are coated. Take them out of the batter, lightly shaking off any excess (don’t shake all of the batter off!) and place them on a parchment or silpat lined baking sheet.
- Bake for 15 minutes, then remove from oven. Whisk together the barbecue sauce and melted butter and brush it on the cauliflower, coating all sides. Return the cauliflower to the oven for another 5-10 minutes till tender.
