Pea Guacamole
When I was a kid, we had a small garden in our backyard where we grew tomatoes, lettuce and peas.
The peas were totally my favorite. To me it was like eating candy. They were so sweet when you ate them fresh out of the pod that I never even let my mother cook them.
Unfortunately, Peter Rabbit and his family decided they liked them too, and so the great garden war began. Since we couldn’t google Mr. McGregor in those days, we did what we could, but ultimately, the rabbits won, and that was the end of the peas.
Sadly, that was the end of at least one of the rabbits too since we had a cat at the time and …..well, let’s just say that I really would have preferred to open the door that Easter Sunday and find a chocolate rabbit on the doorstep.
Here, I just went with the frozen peas in order to avoid reliving the trauma. It never ceases to amaze me that I am not in therapy 7 days a week. Sigh.
Ingredients:
- 2 medium avocados
- 3/4 cup peas (defrosted frozen peas work great here)
- 4 large basil leaves
- 2 teaspoons lemon juice
- 1 green onion, white and light green parts only
- pinch of salt
Directions:
Put all ingredients in a high speed blender and puree till smooth. Serve with raw veggies or pita.
