Tropical Protein Smoothie
My dad’s appetite is legendary in our family.
We’ve all heard the story about how when he and my mom were dating they would go out to a restaurant and each would order their meal. When it came time for dessert, my mom would order some sky high pie or multi-layer cake and my dad would order…..an entire second meal! (Pretty sure the only thing that stopped him from eating a third was the sandwich he ate right before they went out. Seriously. Not kidding. He could totally wipe the floor with that Man vs. Food guy on the Travel Channel.)
To this day, he can still outeat most of us and he never gains any weight. Of all the genes I inherited, why couldn’t I have gotten that one?
That being said, he is a pretty healthy eater though. He loves salads and veggies and since he hasn’t had sugar, refined or otherwise for over sixty years, he is not a dessert eater.
He does, however, eat fruit.
A few years ago, we got him a Vitamix, and he now makes himself a smoothie every night before going to bed out of whatever fruit he has in the fridge.
This smoothie is inspired by his nightly ritual, but I’ve snuck in some protein powder. And left out the second and third meal that accompany it.
Ingredients:
- 1/3 cup of frozen mango
- 1/2 cup frozen raspberries
- 1 Tablespoon vanilla protein powder
- 1/4 cup plus 2 Tablespoons almond milk
Directions:
- Add all ingredients to a high speed blender and puree till smooth and creamy.
I topped mine with some pineapple and raw coconut to boost the tropical aspect along with the mango.
