Vanilla Donut Holes
Everyone in my family knows I love a good gadget, but something I never thought I would have is a donut maker. I mean, as long as Dunkin Donuts is around, why bother, right?
And then I cut processed sugar and white flour out of my diet, and there went my treat. No more donut reward for taking the car to the inspection station conveniently located next door. No more lighter than air Krispy Kreme glazed donuts as a reward for making the long drive back home to visit the family. No more Boston cream donuts as a reward for breathing in and out. Bummer.
Life was not good. But then I saw this little donut maker, and my birthday was coming up, so I thought…why not?
Best gift ever.
Now I can crank out all kinds of donuts to fit the season and occasion. They are super easy to make and the machine is super easy to use.
Ingredients:
- 1/2 cup organic whole wheat pastry flour
- 1/4 cup millet flout (Do NOT omit this flour. Trust me, you will end up with something inedible)
- 1/8 teaspoon salt
- 1 heaping Tablespoon arrowroot
- 1 Tablespoon baking powder
Put all ingredients into a sifter and let sit while you combine wet ingredients.
- 1/4 cup applesauce
- 1/4 cup unsweetened almond milk
- 4 teaspoons vanilla extract
- 1/4 cup coconut oil, melted
- 1/4 cup pure maple syrup
- 1/2 Tablespoon apple cider vinegar
**If the applesauce, milk and syrup are refrigerated (cold), it can cause the oil to partially solidify. You can avoid this by heating the milk and adding it to the syrup and applesauce to bring all 3 to room temperature before adding the oil.
Directions:
- In a medium bowl, whisk together the applesauce through the vinegar.
- Sift the dry ingredients into the wet and stir to combine.
- Let the batter sit for about 10 minutes before spooning into the donut maker.
- Cook according to the manufacturer’s directions.
