Waldorf Chickpea Salad
When most people think of fast chickpea salads, they think of chickpea “tuna” salad. While I love a good “tuna” salad, sometimes you just need a change. Enter my chickpea Waldorf salad.
There are only 7 simple ingredients in this salad, and you probably have many of them on hand a lot of the time. Feel free to swap out the almonds for walnuts or any nut of choice. You may also want to add a pinch of salt (although I don’t find it necessary), or exchange the green onions for red onions. Depending on how creamy you like your “salad” you may decide to use the entire container of yogurt or only part of it. I use about 3/4 of the container, but you may find you like to use the whole container.
This pairs well with pita bread, or a wrap, or if you are watching carbs, you can definitely use romaine or butter lettuce to make an all plant wrap!
Ingredients:
- 3/4 cup chickpeas (roughly 1/2 can)
- 8-10 seedless red grapes
- 1/2 apple, diced
- 2 Tablespoons sliced green onin
- 1 Tablespoon almond slivers (or chopped almonds)
- 1.5 Tablespoons chopped mint
- Greek yogurt(5.3 oz container)
Ingredients:
- Drain, rinse and dry the chickpeas. Place them in a medium bowl and mash with a for or masher until they are chunky.
- Add all other ingredients and mix well. Refrigerate until ready to serve.
