Watermelon and Strawberry Salsa
Summer is finally here and so are strawberries and watermelon!
The days are also longer,so more sunlight which is great…and not so great.
We got a new puppy a few months ago and he loves being outside. A lot. He is also very demanding and somewhat dramatic. A lot.
I have been trying to teach him to ring a string of bells hooked on the door whenever he needs to go out to potty like I did with our older dog. It is not going well. It’s like trying to teach a Llama how to perform in a water ballet. Actually, I might have more luck with that. Chloe learned the bell system in two weeks flat. He is almost eight months and the only time he rings the bells is when I am trying to cook dinner. Then he becomes Quasimodo.
Hey, I’m bored because you are focused on something other than me. Ring, ring ring!!! Hey, the sun is still out and I want to go out and sit on the wall. Ring, ring, ring!!! Hey, one of the neighbors is taking their dog for a pre-dinner walk and I want to go out and bark at them in person and not from the window. Ring,ring, ring!!! Hey, I haven’t driven you crazy in the last five minutes by stealing your shoe or peeing on your rug for the thousandth time. Ring, ring, ring!!!
He is definitely learning to ring the bells, but he is using his knowledge for evil instead of good. I am hoping that eventually the real purpose of ringing the bells will sink in…or winter will come and he won’t want to go out…except to potty.
Ingredients:
- 1 cup watermelon chunks
- 6 yellow (or red) grape tomatoes
- 6 large mint leaves or 10 small
- 1 lime
- 1-2 green onions
- 6 large strawberries
- 1/4 cup diced cucumber
Directions:
- Dice the watermelon, tomato and strawberries. Add to medium bowl with the cucumber.
- Slice then finely chop the green onion, white and light green parts only to equal 2 Tablespoons. Add to the bowl.
- Finely chop the mint. Add to the bowl and toss everything to combine.
- Add the juice of 1 small lime and stir well. Refrigerate before serving.
